This bean salad is perfect for bringing to a cookout, or making at home when you don't want a hot meal. It's easy to prepare and you can customize it with your favorite vegetables. 


Salvadoran Curtido- 1 cup

Cooked kidney beans- 4 cups

Green Bell Pepper- 1 pepper

Chives or green onions- 3/4 cup

Olive oil

Salt, pepper, and garlic powder to taste


Combine all the ingredients in a bowl and drizzle with olive oil. Add salt, pepper and garlic powder to taste. This salad is best when made the night before to give the flavors time to meld. Some delicious additions can include red bell pepper, shredded carrots, cherry tomatoes, celery, or diced cucumber. Enjoy!!!
