AUTHENTICALLY FERMENTED PROBIOTIC SAUERKRAUT WITH BLACK PEPPER AND A HINT OF OAK
Sauerkraut is a delicious food that can be used like a canvas to create diverse flavor profiles. For this sauerkraut we simply added black pepper. It is elegantly simple and useful in a wide variety of ways. It can be added to salad, in place of fresh cabbage in coleslaw, or added to a reuben sandwich, hotdog, or even a burger. The oak added during fermentation replicates the process from the days when these foods were fermented in oak barrels. The oak adds tannins which help the vegetable retain its crunchy texture, while imparting a subtle flavor the the sauerkraut.
